Summer dinners need not be complicated. I grew up eating variations of cucumber salads and now when the warm weather comes I often use them as a quick side dish.
Today has been slightly exhausting and I haven't had a chance to research an eco-Friday piece... so as I was prepping dinner, and as I wait for the last bits to cook, I thought I'd share a recipe I made with our locally grown Okanagan Hothouse cucumbers. Buying local is so important and I am assuming greenhouse cucumber farms are fairly common across Canada.
Easy Cucumber Salad
two long cucumbers peeled and sliced
1 tbsp or so of mayonnaise
a sprinkle of white vinegar
fresh dill finely chopped (or dried works fine too)
fresh ground pepper
In a medium bowl mix the mayo with some vinegar till it makes a fairly light dressing. Sorry, I'm not a measuring kinda cook so just do what looks right to you.
Add the cucumbers and toss till they are all evenly coated.
Sprinkle with dill, I always have The Pampered Chef Dill Mix on hand as it's salt-free and fresh dill often gets missed while I'm shopping.
