Made this easy salad yesterday and it was delish. The boys and I had leftovers for lunch today and it was still nice. The recipe is from Ernie Kasper from Way of the Dove and I got it at Nature's Fare...one of my fave places to shop healthy.
Watch Ernie quickly create the salad here...he does an amazing job but the Pinterest part of me was disappointed with the sappy plate he served it on...this salad needs an earthy plate to show it off, pottery, wood or stoneware not Corelle with peach flowers! Sorry Ernie, check with the foodie gals next time.
Here are the basic ingredients...
1 can garbanzo beans
1 lemon
2 tsp Hemp seeds
fresh parsley
tomato and cucumber
crumbled feta
2-3 cloves fresh garlic crushed
1/2 container sprouted beans ( i didn't have these)
1 TBS Vega EFA oil, I LOVE this stuff and use it for all my dressings
salt & pepper to taste
So easy and fast to make. Enjoy!
