A couple of weeks ago we had dear friends here for the weekend. They have girls and it's always nice to have a dose of girly stuff once in a while around here. They brought a tin of their famous puffs for us. Normally they are a bubblegum pink but they made them green in honor of all the testosterone in our clan.
They were lovely and yummy and very low in fat. I snapped a photo but my recent upload is being poo-pooed by typepad again and I am almost certain it's a corrupt memory card issue now. Here is an image of a simlar cookie I found online.
I also found this delightful idea to add a decadent filling and join them like this...
Meringue Cookies (Otherwise known in our family as Princess Pirate Puffs)
3 egg whites
¾ cup sugar
¼ teaspoon cream of tartar
½ teaspoon vanilla or almond extract
2 to 3 drops gel food colouring
Makes 18-24 cookies (I make them a bit smaller and get about 30 cookies)
Preheat oven to 250 degrees. Line two cookie sheets with foil.
In a large bowl, whip egg whites with electric mixer until soft peaks form. With mixer on, slowly add sugar, a tablespoon at a time. Add cream of tartar, vanilla or almond extract and gel colouring. Continue beating until stiff peaks form.
Spoon mounds (about two tablespoons) onto foil-lined cookie sheets, space them about ½ inch apart. Sprinkle with decoration (optional.)
Place both cookie sheets on the middle rack of the oven and bake for 1 hour (mine don’t fit on the same rack, I use the middle and the top.) Then turn off oven and leave oven door closed for 10 minutes.
Remove puffs from baking sheets and store in an airtight container.
