Summer is here, and along with that comes the fun of having regular house guests. Having easy meals opens up more time for visiting and the beach and keeps hosting friends fun and stress-free.
I recently made a HUGE double batch of this muffin batter called Iris' "Over The Moon" Muffins and served them for three sets of visitors. They are easy to pop in the oven, they make the house smell great. Put out some good yoghurt, lots of fresh Okanagan fruit, fancy juices, coffee and you are all set.
